INGREDIENTS:

  • 1 Wagyu steak (New York, Ribeye, or Sirloin)

  • Sea salt to taste

  • Freshly ground black pepper to taste

  • 2 tablespoons of high smoke point oil (like avocado or grapeseed oil)

  • 2 tablespoons of unsalted butter

  • 2 cloves of garlic, smashed

  • Fresh thyme or rosemary sprigs

INSTRUCTIONS:

  1. Remove your Wagyu steak from the freezer 60 minutes before cooking to bring it to room temperature. This promotes even cooking.
  2. Preheat your pan over high heat. While the pan is heating, season your Wagyu steak generously with sea salt.
  3. Once your pan is hot, add the oil. Place the Wagyu steak in the pan. It should sizzle immediately. This creates a beautiful crust on the steak.
  4. Sear the steak without moving for about 2-3 minutes on each side for medium-rare. Adjust the time according to your preferred level of doneness.
  5. Remove the steak from the pan and let it rest on a cutting board or plate for about 5 minutes. This allows the juices to redistribute throughout the steak.
  6. Slice against the grain, serve, and enjoy your pan-seared Wagyu steak.
